Fresh vegetables and beans are the highlight of this 'No-Cook' recipe. Serve this dish on a picnic or with grilled chicken or fish.

 
 Ingredients:
  • 1 cup green snap beans, fresh, chopped into bite-sized pieces
  • 1/2 cup cooked lima beans, canned or fresh
  • 1/2 cup cooked garbanzo beans, canned or fresh
  • 1 cup green peas, fresh or frozen and thawed
  • 1/2 medium red onion(s), minced
  • 1/4 cup balsamic vinegar
  • 1/2 tsp olive oil
  • 1/2 tsp dry mustard
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/4 tsp table salt
 
 Instructions:
  • Mix beans, peas and onion together in a medium bowl.

  • Combine remaining ingredients together in a cup and toss with bean mixture. Cover and marinate in refrigerator for at least 4 hours or up to overnight. Yields about 3/4 heaping cup per serving.
